The Zero Escape series. I've lost countless hours of sleep playing those games but it was worth it. Virtue's Last Reward story was mind-blowing and has a very interesting story to keep you on edge. I recommend this game a lot. It's that good.

My top three are Katawa Shoujo, Little Busters, and Virtue's Last Reward.

Play Katawa Shoujo if you want something that was written by English-speakers, or a straight-up romance story. The fact that it doesn't need to be translated is what cements it as my number one pick. You always lose some of the intricacies of the original in translation, but here, you can pick up on all the subtle little linguistic twists - and trust me, the writing is quite well done. The routes are completely self-contained, so there's no complex overarching plot, but every one of them is a masterpiece of romance. It's free, but I would pay money for this game without a second thought. (Rin best girl.)

Play Little Busters! if you're not looking for romance per se, but just pure unadulterated emotional stimulation. While I found some of the character routes a tad underwhelming, the final route, Refrain, was probably the single most intense experience I've ever gotten from any piece of fiction. It's also hilarious when it wants to be. (Rin best girl.)

Play Virtue's Last Reward if you want a really intricate plot with lots of twists and suspense. No romance here, just top-notch sci-fi mystery awesomeness. There are a couple emotional moments regardless, but mostly you'll be blown away by the experience of slowly piecing together seemingly-disparate pieces of information by exploring different routes. I especially like how the route selection is incorporated into the plot so smoothly. This one's for the Nintendo 3DS, though I've heard it's being released for smartphones as well, albeit without the (extremely fun) puzzle elements. (Rin best... wait...)

Followed closely by Yume Miru Kusuri, Muv-Luv Alt, Fate/Stay Night, and Family Project.
Actually Romeo Tanaka has written almost all of my favorite VNs.

Cross Channel takes place at a high school(of course) for weird kids. Like the gov't makes kids take a test, and if they get a high score it means they won't fit into society, so off they go to weird people school. Who knows why. But this gives a reason for all the odd personalities, and the MC's perverted shenanigans and odd behavior.
So after a vacation with members of his broadcasting club, they return to town to find it abandoned. They decide to build the antenna to actually broadcast something.
You play through a few weeks, going through each route learning more and more about the mysteries of the story and personality troubles of the girls.
It was bleak-feeling and the art has a dream-like quality to it. Unfortunately the 'everyone's gone/survival' deal is mentioned only a little bit and largely ignored about halfway through, and you focus on the girls and their craziness. Also of note, the protag has a face.
It's my favorite because of the art, the themes, the bleak-ness, and a few quotes that are still with me today.

Also, the hit flash game 'Nanaca Crash' uses characters from this game. Good time waster, that.

Remember 11: The Age of Infinity was exciting throughout. The twists weren't as big as Ever 17, but it also didn't have a dead zone of boring like E17 does. The only other one I can think of where I wasn't bored at all playing was 999. I do seem like a big fan boy with that though.

The above 3 would be my favorites and best purchases as far as VNs go. I never finished Kara no Shoujo completely though and would expect it to be my favorite if I ever did. Maybe even Eve Burst Error could finish up my top 5 favorites if I just went through the dated aspects of it. I'm pretty sure Steins; Gate will round out my top 5 though, so Eve would be eliminated.

Plenty of others just bore the hell out of me and are just mindless H romps or their writing, or at least translations, are just uninteresting (thinking about other Nitro+ and Type Moon stuff).

I just recently played Go! Go! Nippon! and boy... what an experience THAT was. I couldn't tell what the game's point was. Was it to teach you knowledgeable things about Japan? Or was it just to cover up the dating sim side of it? Meh I guess it was both. If you must know, I of course chose Akira because tsunderes always win.... only in the case of that particular game haha.

I also just downloaded the Kanon visual novel. Not very far into it yet, but it's not like I don't already know the story.

Eroge still qualify as VNs, mate. No shame in that, though one has to enjoy most of them in a rather tongue-in-cheek manner.

That being said, I am the resident School Days fan. The game is like a car crash, and I cannot stop looking.

Aside from that, though, I enjoy several of the usual suspects (e.g. Fate and Katawa Shoujo), and I am looking forward to playing the official localization of Steins;Gate (and hoping for an official release of ChäoS;HEAd, which is badass).

I have plenty that I love but top dating sim for me is Yume Miru Kusuri : a Drug that makes you dream. It was the first time I played a game that dealt with real life problems in a way that connected with me, and had my heart racing at some parts. There is also the fact I was yelling kill that bit**!! at my computer near the end of the bullying arc. I also love Saya no uta, Heart de Romance, and a few darker titles like Virgin Roster.
Right now I really like Yumina the Ethereal where else are you going to play a game that makes a reference to Gurren Lagann, and Nintendo? Plus the conversations are damn funny as hell at times.

I have both 999 (new iOS version) and Winter Wolves' game Roommates on my iPod right now, waiting to be used. I'll give them a try soon.

It's a romance story and (kind of) a tourist guide. There's not much to either aspect. And there's no simulation gameplay.

The Steins;Gate visual novels have to be my absolute favs. The original Steins;Gate visual novel was one of the main reasons I wanted to learn to read Japanese. I have the first game on Xbox360 (Limited Edition) and PSP. I still have yet to play the other games though.

G-Senjou no Maou is my all time favorite with the Muv-Luv series being right behind it. Says no Uta is also really high on my list. I also really enjoyed Planetarian, its one Key's VNs that doesn't get much love. There's so many good VNs >.<
