I'll start!
Mine is Onizuka Eikichi! The Great Teacher O! It's a bit old but I re-watch it every now and then. Basically, Onizuka is a legendary ex bike gang leader who has decided to be a teacher. He get's in all kinds of trouble and he uses the things he learned from biking to teach his students. Granted, his methods of teaching are a bit different from normal teachers (understatement) it gets the job done, in a way funnier way. I recommend watching the English dubbed version because I think it's funnier.

While not "all time favorite", (I like too many!) she certainly ranks up there among my most beloved characters - Yoko Nakajima from 12 Kingdoms.

Yoko is incredible because of her immense, moving and profound character development. She goes from being a whiny, bland high-school student, to the capable, brave, upright Emperor of a country in a fantastical world.

When she is taken to this new world, Yoko has to go from being this submissive, weak girl to someone who has to learn to depend on herself. She has to find out who she really is in order to survive.

What makes Yoko so great is that she realizes that she made mistakes, and accepts that she was a downright unlikable doormat of a person. She confronts her mistakes, realizes them. She battles her demons both literally and figuratively, and overcomes her fears, her insecurities, and her personal problems. She becomes strong physically, mentally, and emotionally - and she learns to believe in herself, and finds out who she is (not who people want her to be) as a person. When Yoko when she discovers her flaws and shortcomings, she doesn’t hide from them, but she accepts her flaws, and learns to better herself both as a ruler and as a person.

She goes from being a most unmemorable girl, to a noble, kick-ass Queen in one of the most realistic, detailed and amazing character transformations I have ever seen. And the beauty about Yoko is that she keeps on growing. More and more sides of her are developed and revealed as the story goes on, and she keeps working through them - bettering not only herself, but also her new kingdom which she must bring back to its feet.

Gonna go with Sakata Gintoki from Gintama.
Gintoki's the type of guy who's had a not so great past but chooses to live in the present and see all the good things that he does has. He makes it a point to always "teach/beat some sense" into people about how it doesn't matter how shitty you are or how shitty your life is, just live for yourself and cherish those around you and you will be fine. Even though Gintoki is rebellious he cares when it counts and he will risk life and limb for anyone he believes in (even though he will be complaining about it).

As unsuspecting as it may seem, in his own way, he preaches about the importance of family, how they are the ones always with you, he talks about holding onto you dreams even when the whole world's against you and to always protect your values/soul because they make up who you are.

Also I think alot of fans like him because he is relatable, i.e: lazy, reads manga, loves sweets, sleeps alot and occasionally saves the world. Okay, besides the last part. :D

Gintama in general is an anime that has lessons that I try to live by.

Unfortunate for me, I don't look up to any character from any anime series as a role model because I either A.) haven't found one yet or B.) don't allow any fictional characters to be my guidance
