I'm gonna go old school for a bit and say that I would like to see more of "Ah My Goddess", seeing as how the manga is still going (and some recent stuff is getting interesting finally). Along with that I would enjoy more "Cowboy Bebop".

Recent anime that deserves more would be "Bodacious Space Pirates" a weird title but the show itself is pretty good.

Clannad (The whole series including the VN)
Steins Gate (Really wish i read the VN as well)
Little Busters! (The whole series including the VN)
Code Geass (To this day i still can't choose what i believe is the better ending)

There is probably some others that i am leaving out but these 4 were amazing.

Oh and Nagi No Asukara depending on how the ending turns out would probably be here as well
I would also include the 2 Anime movies Akira and 5 Centimeters Per Second

Lol, good one!

There's so many for me, but I guess Bleach was one because the ending will not get animated unless the anime comes back. The Pet Girl of Sakurasou was so darn infectious and sweet it made me very sad when it ended. AnoHana because it was so sad to see them have to say goodbye and I've not cried watching an anime since. Hanasaku Iroha, Outlaw Star, Eureka Seven and Spice and Wolf left me wanting more too.
