The last fantasy series I really got into was probably the Night Angel Trilogy by Brent Weeks.

The Dragonlance series made me a fan of reading back in high school (i loathed reading before that!) but The Wheel of Time by Robert Jordan is amazing. Speaking of which, Branden Sanderson was the perfect replacement for Robert Jordan and that cause me to stubble upon his amazing books as well. The Way of Kings is non-stop awesome.

I love the song of ice and fire series by George RR Martin, I highly recommend it. 100 times better than the show.

The Stormlight Archive by Brandon Sanderson is also on its way to becoming a classic series.

Long fantasy series are hard for me to get into because I like reading a variety of genres so I'll just list some good stand alone fantasy novels.

The Goblin Emperor by Katherine Addison
Neverwhere by Neil Gaiman
Tigana by Guy Gavriel Kay
The Night Circus by Erin Morgenstern
The Watchmaker of Filigree Street by Natasha Pulley
The Golem and the Jinni by Helene Wecker

And I've read all of Harry Potter and Lord of the Rings.

The only series I've read recently is The Kingkiller Chronicles by Patrick Rothfuss. There are only two books and a novella out but they are amazing and definitely a series to check out.

Haven't finished it yet, but my boyfriend recommended me the Farseer Trilogy by Robin Hobb. Speaking as someone who doesn't go for ultra high-fantasy, it's well-written and very imaginative.

Does Good Omens count? That's a mainstay.
