1. Swort art online - The music in this anime is magical.
2. Shiki - That one soundtrack called shiki actually gets me to tears.
3. Naruto - (1st series) Sadness and sorrow, nuff said
4. Psycho pass - It's the kinda show that has a strong atmosphere, and if i listen to the music it had, i go back to the state of mind i had when i watched it.
5. Attack on titan, Guilty crown, Blue exorcist and kill la kill - (Same composer, but kill la kill currently has the best soundtracks in my opinion)
6. Fairy tail - The music pushed this anime A LOT.
7. Madoka magika
8. Kuroko no basket
9. Hajime no ippo
10. Death note - Death note wouldn't be Death note with different music
11. Number one from Bleach

In no order. And none of the animes mentioned have only one song that is good, or one particular opening/ending which everyone knows and loves. No; the animes I selected have continuously great music throughout the run of their series though I may not like the series themselves. (Like CLANNAD) or the series may be a poor adaptation of a great manga (like X, or even Tsubasa Reservoir Chronicle to a lesser extent). But there is no denying the music is beautiful.

Sailor Moon Besides the classic openings, this series is chock full of awesome music from openings, endings, fillers...etc. The music in this series is truly great.

Revolutionary Girl Utena Excellent opening, and great music throughout. Especially the bittersweet piece, The Sunlit Garden and of course the insane and catchy Absolute Destiny Apocalypse - the movie version of this theme is extremely catchy too.

Naruto - I don't know about the second series, but the first had beautiful/great music in every episode, and some excellent openings and endings. Sadness and Sorrow anyone?

Puella Magi Madoka Magica Do I really have to explain this?

Princess Tutu Classic music in abundance and a really beautiful opening.

X The music's the only good part about this adaptation, and it is really good. Especially the full orchestra version of Sadame (Destiny) and the bittersweet Feelings. Perfect fits for a series about the Apocalypse. The movie version (another HORRIBLE adaption of a great manga) have some good and very psychedelic music.

CLANNAD/After Story I only like the music in this series, and luckily there are many pretty, touching songs. I especially love the Nagisa Warm Theme.

Fruits Basket Other than the pretty and classic opening song, there are lots of other memorable, and sometimes eerie pieces. Check out Serenade and Memory At Home.

Tsubasa Reservoir Chronicle Same person who scored Puella Magi Madoka Magica scored this (unfortunately bad adaptation). Naturally, the music is gorgeous of course.

Cowboy Bebop. 'Nuff said.

Full Moon wo Sagashite Not such a great series, but all those people who like J-pop this is for you. Eternal Snow comes to mind of course.

15 I heard. amazing indeed. The soundtrack is SO much a part of what makes this show kick ass. (that and monty oum's combat choreography)

Been endlessly playing the CD playlist off of you tube since I bought the CD.

Movies are allowed as well like Castle in the Sky, etc....

Castle in the Sky probably had my favorite anime OST for a long, long time...
