They're fun and relaxing.
Minami-ke is a great slice of life series.

They're your typical sketch comedies.

If you're the kind of person that didn't mind comic strips in your newspaper, you're likely to have some appreciation for anime that put conventional comedy and drama as the forefront.

Since their relationship dramas are basically, "unlikable pervert spontaneously has every female person he likes interested in them," they get very boring and unlikable. (Harem is almost consistently voted on as the most lazy or least interesting genre of anime both domestically and in Japan.) But sex sells.. so.. it's lazy money. Plus the perv products such as hug pillows, indirect advertisement every time someone makes a doujinshi off it and sells it at a convention, character figures in lewd positions, posters, etc make a pretty healthy amount of money.

Action anime tend to focus on action and sitting around having boring conversations over comedy.

Product shows such as pokemon, yu-gi-oh, etc tend to be very uninteresting if you're not able or don't have any interest in the product.

Emotional drama anime can be quite melancholy and depressing.

Slice of life is just good wholesome family fun and a break from the stresses of life.

Everyone has their own thing. I'd put slice of life anime as the anime equivalent of shows like Seinfeld, the Simpsons, Doc Martin, The Munsters, etc.

If your having a stressful day at work or during classes it's nice to sit down and watch something calming. Anime like Non Non Biyori can really lighten up your mood. That's why I watch slice of life.

I generally need to watch them alongside something violent (one in the day, other at night) in order to not go insane due to the moe/drama/high-pitched voice/crying/ecchi/blush/chibi/triangle saturation. That being said, you can find some that have plenty of great humour, that are at times very relatable in ways that "badass mercenary in space" isn't, that feature poignant drama or really elicit some emotion from you while watching. Or, failing these, they can simply be great to fill a slot of your day in which you just want to sit back and indulge in something silly and randomly amusing that'll put a smile on your face. Usually not long before I go to sleep or after watching something really disturbing...

You mean Love Live?

How can you not love them? They are happy and funny shows that don't require you to think about anything but just enjoy them. Can really brighten up a dull day and make you smile. After watching somethign dark like Kill La Kill, Love Live brought me back into the real world xD And it makes for a nice change of pace; to be laughing happy tears instead of crying sad ones ;.;

Well Nisekoi isn't Slice of Life, it's just a shitty harem. SoL shows are appealing to people because they usually relaxing and are good at eliciting various emotions upon the viewer. Different people like different things. Not everyone likes poorly written battle shounen. To be honest, some of the best anime are SoL.
