These aren't the best anime ever, but these are either classics, mentioned a lot in discussions, unique in some way, or are here for the influence they had on the industry. So you should watch these.

Color-coded because why not.

Cowboy Bebop
Akira
Neon Genesis Evangelion
School Days
Azumanga Daioh
Madoka Magica
Berserk
The Melancholy of Haruhi Szumiya
Gurren Lagann
Serial Experiments Lain
Bakemonogatari
Elfen Lied
Love Hina
Code Geass
Mushishi or Kino's Journey
Fullmetal Alchemist AND Fullmetal Alchemist Brotherhood (To participate in the debate)
Legend of the Galactic Heroes
A long-running shounen or Attack on Titan
Any movie or show by Satoshi Kon
Some sad anime, besides Elfen Lied (Like Clannad, Anohana, Angel Beats...)
Ghost in the Shell
And at least know what Boku no Pico is.

I was gonna make a list like this, but you pretty much got it covered, haha. I'd mention Steins;gate and Spice&Wolf just because I like them and they are so well done. This list is what people should definitely check out.
