Man, you're making miss old school Toonami now which was what introduced me to anime in the first place along with Sci-fi's (yeah that Sci-fi before it became Syfy) Ani-mondays.
Favorites from back in the day:
Neon Genesis Evangelion
Trigun
Cowboy Bebop
Rurouni Kenshin (This and NGE are what made me really get into anime since I finally saw that anime wasn't just stuff for kids and that it truly was an artstyle all on its own)
Gundam (UC timeline)
Gundam Wing
Pokemon (as a 7 year at least, this was best thing ever)
Digimon (same reason as pokemon)
Planetes
Macross
and finally:
Maison Ikkoku, which I will still consider THE Romance anime, Kimi Ni Todoke comes close and is adorable for what it is but nothing captured the Romance Genre quite as well as Maison Ikkoku and I doubt anything ever will, at least not in anime form. If they remade the series (doubtful considering it's episode length of 96 episodes ) I'd love to watch that in updated quality, I still need to finish up the movies though.

I'm surprised only one person has mentioned Ronin Warriors. That show was a classic good vs evil with some really well done artwork for the time. I see a lot of folks talking about DBZ, but what about the original Dragon Ball? It was campy humor for the sake of being funny and didn't try to get deep or teach life lessons. Where else can you find an entire episode about a pig's obsession with underwear?

And as many folks have mentioned Neon Genesis, I won't mention it other than to say that I fear a remake would take away some of its charm. The lack of detail in many locations served to reinforce the importance of the detail in the places where they put a lot of work into such things.

Trigun is my favorite 90's anime, although I haven't seen many. I plan on watching more soon c:

I loved Ronin Warriors. That's actually one of the few I haven't looked hard enough to find to rewatch. And that show started the long trend of my favorite character turning good then dying...

80s/90s anime I like include:
DBZ
Yu Yu Hakusho (i have this on disc and rewatch it often. it's probably tied with Baccano for most rewatched anime series)
Trigun (also have the discs and watch a lot)
Outlaw Star (was that 90s or early 00s? o.-)
Sailor Moon
Voltron (this one could use a remake...or at least a redub)
Saint Seiya (the dub has one of my favorite dub changes ever..."birdy numnums" XD)
Pokemon (Kanto and the first three movies)
Digimon (i re-watch the first season fairly often)
Cardcaptors
Gundam Wing (this I want on disc, if they ever re-release it)
Cyborg 009
Ronin Warriors
Batman TAS (not anime, but it's in the same mental category; I've been rewatching this)
Big O (it was either 90s or early 00s)

That's all I can think of without getting into things like He-man/She-ra, Swat Katz, and Nicktoons (rewatching Doug, I realize I have grown up to be Porkchop and I am okay with that).
