Why do all streaming services have episodes missing of this show? I want to try it out but everyone has something different and makes it difficult.

They don't have all the episodes either. They currently have a gap between episodes 336 and 391. From the show page on Funimation.com:

From my understanding, Toei is supplying CR directly, just like how they're supplying Funimation with the episodes.

Toei likes to give One Piece episodes in batches. This has been discussed before. We were wondering if CR is going to add the episodes that are not released on DVD yet. The official One Piece simulcast started with episode 391. As of now, there is no official way to get episodes 337-390. Funimation will start releasing season 6 (episodes 337-384) on DVD this Fall. If this is the Toei I know, they will not allow CR to post episodes that are still not released on DVD. Maybe I'm wrong, but Toei can be too stingy when it comes to One Piece. After all, it is one of their most prized possessions. If you want to watch episodes 326-336, they are available on Hulu since they're already out on DVD. Episodes 391-618 are also available on Hulu. As for the 2 crossover episodes with Toriko and the special crossover with Toriko and Dragon Ball, I doubt we'll ever see them officially. So, if you notice some episodes missing on Hulu between the numbers I mentioned, they're crossovers since for some reason Toei numbered them as actual episodes.

That would be Toei. One Piece is not doled out quickly by them at all. Funimation wants ALL of One Piece, but Toei is very selective with how they give them episodes. It is a very slow process and it will take time. Not sure when the missing episodes will show up on CR. Could take a while. Heck, it took a really long time for Funimation to get Water 7 and Enies Lobby. Probably a year or more after Sky Piea came out here.

While CR licensed the series from Toei, they have been re-encoding episodes from Funimation DVDs or DVD masters. They have run out of episodes to re-encode so now they have to get source videos from Toei and then add subtitles. The delay is either because CR are waiting on materials from Toei or because they are waiting for the gap episodes to be subbed (by either Funimation or themselves).
