Attack on Titan has by far the best ost I have ever heard, Fate/Zero, Kyousougiga, Hunter x Hunter (2011) also have amazing OSTs and I've just started watching Mawaru Penguindrum and it has a beautifull OST too

I like Pandora Heart's OSTs, very matching to the mystery of the anime itself. I also like 07 Ghost OSTs, Pokemon has a nice collection of OST too, Naruto and Naruto Shippuden OSTs are quite good too, and D. Gray-Man OST is great as well.

Cowboy Bebop - One of my all time favorites. It spurred on my deepening interest for jazz. It has so many classic songs it's really hard to pick any favorites.

Samurai Champloo - I'm not a fan of hip-hop/rap but this show's OST got me really interested in the instrumental aspects of hip-hop, especially those with a more...jazzy-vibe to them. It introduced me to the DJ Nujabes (R.I.P.) and other giants of that genre of music. I have since, bought and collected albums from many artists who dabble in (what I like to call the genre), Jazzy-beats since everyone has their own name for it.

Aria & Yokohama Kaidashi Kikou - The OST's for both of these shows are simply amazing. And I mean, amazing as it's intended. They are calming, full of simple, slow melodic pieces that make you want to just kick back and relax and enjoy the day as the sun silently glides through the blue sky. Also, both really complement each other quite nicely and if listened in a playlist, will be one of the most blissful, and stress-relieving experiences in any given day.

Kid's on the Slope/Sakamichi no Apollon - (Bit of a trend here with Watanabe lol!) But the duet by the two main characters is arguably one of the best jazz pieces I have heard thus far. Yoko Kanno was at her best creating the soundtrack for this show and it is very very good. The duet can be found on Youtube, it's a major part in the series but look up "Sakamichi no Apollon OST - Kaoru & Sentaro Duo in Bunkasai Medley" on youtube. Look up other songs like "Run," "Jazz for Button," "Easy Waltz," and "Lullaby of Birdland." Very good renditions and originals, highly recommended.

If going by specific anime, then Guilty Crown is my favorite.

I like a lot of other composers as well. I like some Taku Iwasaki osts (Katanagatari, Noragami, Soul Eater, Samurai X Trust and Betrayal). Yoko Kanno (Cowboy Bebop, Ghost in the Shell, Darker than Black) is a given. Yuki Kaijura's work in Kara no Kyoukai is god tier. The guy who did Bleach, Magi, and Evangelion is really good as well (same guy, just forgot his name). Joe Hisaishi should get a mention for the Ghibli soundtracks he's done.

I'm on the Sawano bandwagon. Every soundtrack that he has done so far hasn't disappointed me so far. Especially on Kill la Kill. Nui's theme is amazing!

FLCL - This was easily one of my favorite soundtracks of all time. It matched the mood of the extremely hyper and chaotic anime.

Samurai Champloo - Like someone mentioned earlier, I'm not a huge fan of rap and hip-hop, but Nujabes does a great job with the entire soundtrack. It has a serene feel to the entire soundtrack. I always have to listen to Aruarian Dance whenever I need to study or just relax. It's a shame Nujabes is no longer with us anymore, but his music will still live on.

My favorites have to be from Iwasaki Taku (Soul Eater, Gatchaman Crowds, Black Butler, Noragami) and Sawano (Kill la Kill, Ao no Exorcist, Attack on Titan).
Other soundtracks that I fell in love with were:
Puella Magi Madoka Magica, FLCL, FMA, Gintama, Samurai Champloo, Psycho-Pass, Fairy Tail, Witch Craft Works, and Eureka Seven

These have been some of the best soundtracks I've heard up til now.

For Anime OSTs,

Escaflowne, nothing has really matched up to this ever since.
Attack on Titan, OST so epic my heart painz when listening
Fairy Tail (seriously have to love the bagpipes and the celtic metal)
Akira, one of the most unique OSTs of all time
Cowboy Bebop, great jazz soundtrack
Trigun
Death Note (loved all the puzzle music, and that first writing scene where Light is conducting with a pencil)
the three Fatal Fury animated movies
