When I started watching anime I had a preference (Romantic Comedy, Mecha, Magic) and now my eyes have been widened. All anime are good. I have seen 123 different anime now, and I can love all genres. So my "change in tastes" was one of expansion, a very good change in my opinion.

I used to only like Romance and Slice Of Life, but i'm interested in almost every genre now, just trying new things out helped me to change that. :p

When I was first getting into more Otaku-fare anime a few years ago I tried watching MM! and the masochism was too weird and off putting for me so I dropped after the first episode. Now I rewatched it and I found it funny and over-all pretty enjoyable and no weirder than what I usually watch :P

I also used to hate the odd Shaft animation style, like I dropped Bakemonogatari at episode 1 a few years ago because of it (plus I was super confused and thought I was watching a sequel to something). Now I love pretty much every series that studio has done and can't get enough of the style.

Always been a sci-fi/mecha anime fan since childhood. However, there are some genres that I liked as a kid/teen, but no longer as an adult. Those include harems, slice-of-life, and romance, and they have been replaced by mystery, suspense, and horror.

Not much changed as it has things added on instead.
I used to watch more magic/fantasy series
Now I'm more into Cute Girls Doing Cute Things Slice of Life series, but I still highly enjoy magic/fantasy ones.

indeed. there was actually a time when I thought I might have "outgrown" anime because the shows I used to enjoy, I no longer found myself enjoying, so I just stopped watching anime for a while. I started watching again once I found that there was a lot more/different anime than what I had used to watch, and there was still things I enjoyed.

I too have been bitten by the 'Cute Girls Doing Cute Things with Cute (insert something here)' bug.

I started a long time ago with Star Blazers, Battle of the Planets, Robotech, Voltron, etc.. So my tastes had always swung toward big battles, big explosions and big ships. But slice of life and rom/coms are quickly becoming my favorite. Though I still like an explosion or two now and then.

Although not necessary, I find fan service to be highly amusing so the more a series has the more fun it is to watch.

I was used to be a Shonen guy from dBz on the old until I glazed upon Love Hina. Since then, I've been more flexible on anime genres but sought either slice of life & comedy the most

I think it's more or less the same: slice of life, romance, drama, comedy, action, gore, fantasy.

But I think I have been diving more in the darker psychological thriller types, sci-fi (cyberpunk, dystopias, post-apocalytpic), and more gorey anime like Monster, Shiki, Hell Girl, Attack on Titan, and Shin Sekai Yori as of late.

At the same time I think I outgrew female harems. This is evident in me struggling to watch the first 2 episodes of Beyond the Boundary. It just feels so cliched, tired, and unoriginal even though the animation and art style are stunning. I also think I'm slowly outgrowing shojo romance and starting to want more josei-type romance like NANA (even though technically it's shojo).

Not much... I wouldn't say it "changed" as much as it just became more refined.

Originally, I used to watch just about anything because virtually everything that anime had to offer was so fresh and unique to me. Now, while i'll still watch almost anything, i'm pretty firmly camped in the slice of life genre

However, I started out loving the slice of life genre anyway, which is why I say that my tastes simply refined rather than outright changing.
