I used to like the super long, super popular Shonen shows. Now I watch a vast range of genres. My favourite example to use is that you can find both Hellsing Ultimate and K-On! in my collection. I've also started going into a few of the more obscure titles.

Oh yes. I had the 'EVERYTHING MUST BE HAREM, AND ACTION, AND ECCHI AND 18+!!!' phase. Eventually, however, I branched out and I'm now open trying almost anything.

Yes. Recently I've been trying out various genres that I didn't like at first but ended up enjoying.

Didn't like:
Mechas but got into Code Geass, Neon Genesis Evangelion, and Gurren Laggen

Didn't like:
Shojo but got into Fruits Basket and Madoka Magica

Didn't like:
Sports anime but liked Hajimi no Ippo and Kokoro no Basket

Didn't like:
Horror anime but loved Attack on Titan

Since when has that been part of horror genre?

Personally I used to be skeptical about slice of life but having watched stuff like Golden Time, School Days and whatever not I regret not getting in to this genre earlier.

When I was younger, I used to watch mostly mecha and some popular shounens like Naruto and Bleach. Nowadays, I'm picky about mecha and extremely picky about shounen. That's not to say I avoid those genres like the plague or anything, I just have much stricter personal standards for them, so I end up watching very few of them.

In place of those genres, I've become quite fond of slice-of-life, drama, seinen, and psychological series.

But I'm still not fond of harems.

Used to prefer anime with lots of cool action sequences and neat character designs. Also loved to see the impossible worlds that could be imagined in anime. While I still love those things, shows like Clannad, Anohana, Hanasaku Iroha, and K-ON! have made me a fan of slice of life anime (whether or not they decide to include mystical elements).

I think mine has a lot. I used to stick to the more serious and adult oriented anime when I was a teen. And now that I am older I watch everything from stuff intended for kids, to serious mature themed shows, and even wacky off the wall comedies with no real demographic. I think my tastes in anime has become more diverse.

Not the taste. More like patience.

I have to test my patience on each anime I encounter.

For example, Bleach. Hated it in .01 seconds.

Predictably, I've gone from watching lots of shounen stuff to strongly preferring seinen. I used to watch anime for cool fights and badassery, but I've shifted completely towards drama and internal conflict, especially tear-jerkers.

My appreciation of horror and psychological stories hasn't changed though. As I always have, I love the dark and twisted side of things, and get a nice rush out of scary stuff. Anime's admittedly not too good at the latter (books do it best), but darker psychological shows like Higurashi and Madoka Magica will always have a place among my favorites. (As for Attack on Titan being horror, I would strongly disagree. Horror is all about atmosphere. Attack on Titan is good, but it's high-adrenaline and concerted. Horror is eerie and focuses on the powerlessness of the protagonists, and not just comparatively. Horror cannot exist in a setting where the protagonists actively and directly face off against the threat.)
