do you mean, make it as... create your own fan art? or are you asking, how to take a screenshot?

If your watching anime through VLC media player. you can take a screen shot of what ever is on screen (i dont know if its possible in the CR player sadly)

VLC screen cap instructions.

1) open video in VLC (self explanatory)
2)pause video at the scene you wish to take a screen capture of.
3) right click on the screen (where the video is being played)
4) move your cursor down to the "video" option
5)once the "video" sub bar has appeared, scroll down to the very last option "take snapshot"
6)click "take snapshot"

the snapshot should be saved into the "pictures" sub folder in your "library" folder.

Easy as pie! If you've got an image editor (e.g. Paint-dot-net, GIMP, etc.), pause the video, hit PrtScn (Print Screen), then open your program of choice and hit CTRL+V to plop the image into the editor.

You mean large pictures from transitionary scenes? probably your example was created taking 3 or more screenshots and then arranging them vertically on top of each other, this is another good example: http://i.imgur.com/2DHE1ZX.jpg

The resolution is 1920x3013, it was created using 3 screenshots at 1080p (1920x1080), I've seen many more complicated pictures like these, there is one I remember very well which was from a diagonal transitionary scene in the ending of an anime series, you could see the missing pixels on top-right and bottom-left corners and the resolution was ridiculously huge, it probably required two dozens of screenshots to make it.

Lots of screenshots. Then either manually stitch them together in Paint or some other graphics program. Or use an automatic stitcher that are available to download online.

You are talking about stitches and such. It is easier to do it with a video player of downloaded anime instead of streaming. Take a screen shot (MPC it is alt-I) and then keep doing that until you get the full body then it is best to color correct it and such.
