I started with Fate/Zero and I'm doing just fine. It's the prequel to Fate/stay night, which is arguably the main installment. Once you watch Fate/stay night, you can watch all the spin-offs the series has, since they'll actually make sense then.

Watching Fate/Zero might successfully hold you over until the Fate/stay night reboot starts also.

I would recommend watching Fate/Zero first.

It explains TONS of things and you really get to dive into Saber's character.

After that, I would recommend just waiting for the new Fate/Stay Night this year and not watching the original Fate/Stay Night. But if you really want to continue after Fate/Zero, go download the visual novel for F/SN because it's excellent. The original anime just wasn't that great imo.

Fate zero = prequel

Fate stay night has 3 routes

Fate stay night (2005) tv series = route 1

Fate stay night (2014) tv series (not yet released) = route 2

Fate stay night: unlimited blade works (movie) is a mishmash of route 2, so I would recommend just waiting until the 2014 version airs

Fate stay night: heaven's feel (movie/not yet release) = route 3 (you'll likely need to invest your time in watching everything before to be able to understand the events that happen in this movie)

spin-offs:

Fate/kaleid liner Prisma Illya
and carnival phantasm

Fate/Zero might spoil you a bit though. Personally I feel that it would be more natural to watch Fate/stay night first, that way you'd get more surprises and unexpected events.

Zero is probably more fun to watch though, but I just feel that way because stay night can't really measure up to the original VN. (And more so, it's based on the least interesting route )

I'd say push your way through the original Fate/Stay Night first and then watch Fate/Zero since the upcoming remake and movies are following Unlimited Blade Works and Heaven's Feel respectively, while the original Fate/Stay Night went along with the Saber route. You can watch the UBW movie but it might be a little confusing since they had to cram the entire route into a single movie.

The issue with skipping the 2005 series is you're missing out on one of the routes. It was meh at best as a tv series overall but was a lot of fun to watch some of the time. Plus you need to at least hear Emiyou say "People die if they are killed" at least once. It's like a thing that must be done, like suffering through the final two episodes of Evangelion or haruhi endless eight.

Also, Carnival Phantasm is amazing and you should watch it so for the laughs. You can check out Princess Illya if you want over her on Crunchyroll if that's up your alley (it wasn't for me)

Edit: Also, if you try doing Fate/Zero before the original series (which you should still watch), it's going to be REALLY REALLY jarring, like mindnumbingly so. The difference in animation quality is just, good god. So yeah, watch Fate/Stay Night first or you won't be able to get through it. Kinda how watching FMA:Brotherhood before the original kills the watchability of the first series

I would say start with the original fate/stay night, since I think it will give you a good idea on how the whole series works. It's kinda like when some people asked me which fullmetal alchemist show they should watch first, the original or brotherhood, even though I still prefer brotherhood slightly over the original, I would still recommend the original first. Sorry if am babbling on about something else Then after the original, watch fate/zero then wait for the upcoming remake.

Plus I would also recommend watching this review about the original fate/stay night

Watch Fate Zero, I just finished it recently and it was awesome.

I know Fate Stay Night (studio deen) is pretty disliked by the fandom but I'm also gonna give it a watch later just to say I've seen it.

Then Carnival Phantasm.

And I'm watching the second season of Fate Kaleid right now

Then when the remake of Stay Night comes out I'll watch that as well

then I would watch 2005 Fate Night Saber's route but its ok if you skip that one and wait for the 2014 TV series.

Yeah, like everybody else, Fate/Zero is the way to go since it does come first chronologically. Its story is by far the best of the series. Then watch Fate/Stay Night the TV series as it directly ties into that show.

Is it really worth watching fate/zero first thing? Will I miss out on many unexpected events and such?

Most of the surprises will be ruined for you.

Here's the thing, chronologically Fate/Zero comes before Fate/Stay Night, but it wasn't written that way. Fate/Zero is meant to fill in the back story after finishing Fate/Stay Night.

People hate on the Studio Deen version of Fate/Stay Night, but essentially it serves its purpose. If you skip it like many suggest you'll miss out on the arc of the story it tells. There are some elements that don't belong, but I think it's decent enough.

Then watch Fate/Zero.
