"Give it to us raw and wriggling!" Actually, I prefer rare, not totally raw. Steak tartare was pretty good when I tried it, but just a little bit of char on the outside adds to the flavor experience for me. Naturally, I'd do this only with steaks prepared at home, or at a restaurant I trust.

Anywhere from medium to well done is fine by me. My usual go-to preference is medium well, but if it ends up a little more on either end of the spectrum I'm not bothered.

Pull it of the heat at 140 and let it coast to the finish. Try to give it a good sear on the outside though. If I'm ordering out, I go with medium unless I really trust the place.

Medium Rare, cause most of the cheap steak I eat has no flavor with rare. You gotta cook a little flavor into them...

Very rare, just so I can have the steak hot when its served. If you can eat fish raw why not right?
