Hey guys so I just got a Crunchyroll membership and I added some anime I currently watch to my queue. All of them start on episode one, how do I make it so they start on the most recent episode? Thanks

Once you start watching an episode on Crunchyroll that episode should show in the queue. (If you finish an episode that's not the most current, the queue will "advance" to the next episode).

So, if you want to set them all up to show the most recent episode, just go in and watch a few minutes of each--either at the very beginning for the episodes you haven't finished yet--or the very end, if you want it to go the next episode once the new episode has a "placeholder" on CR.

So I have to watch all of them or can I just skip to the most recent and it counts the next one as the most recent episode.

Whatever episode you start playing a few minutes of, that is the episode that will show up in your Queue, until you finish that episode. When you finish the episode, it will show one of three things: 1. the next episode (if it is available); 2. the next episode placeholder (if it has been added, and the next episode is not yet available); 3. the episode you just finished with an orange bar across the bottom of the image (if it was the last episode in a series, or the next episode/placeholder has not yet been added).
