Hi everybody! I am sure I can't be the only one with a vegetable garden. Right now I have a bit of a late summer zucchini situation. Well, the eggplants are also pretty frightening. As I am sure any other gardeners know, zucchini are sneaky jerks that suddenly balloon in size without warning. They are unstoppable. All I can do is desperately eat them. Right now I am making zucchini muffins.

What are people's favorite ways to eat zucchini and/or eggplant?

Does anyone else have any other vegetable gardening horror stories?

Haha, I swear that's all zucchini is good for (I hate zucchini)! And weather seems to have no effect on zucchini, like every year is always a good year for zucchini .
Sorry I don't have any real solutions for you. You should make eggplant parmesan, though. When I use to plant stuff in my mom's garden that's what I did with the eggplant. It's pretty good actually.

I'm a vegetarian, well pescetarian, I will eat them baked with mushrooms and peppers. I don't eat fried foods and mostly eat salads and sushi =)

I do some patio-box gardening.... I try to grow some tomatoes but I never get them started soon enough.... they're small but tasty when I do grow them, I didn't try this year.
I've got roses and a nice hydrangea. My mom planted some mums a couple years ago and they always seem to keep coming back. I have a nice touch for coral bells but I was a little lazy this year so they didn't do as nice as usual. (got to keep them watered.)

Maybe next year.



Zucchini... I have better luck with them if I treat them like cucumbers.

i'd love to have a veggie garden! unfortunately i don't have a place to do that :/ but gardens are great. veggies are great. But a vegetable apocalypse? no thanks, i like my meat and taters

Zucchini bread is pretty tasty but I figured it would be more fun as muffins. Then I replaced the usual toasted walnuts with chocolate chips. Now I am debating topping them with a lemon glaze.

my aunt had a zuchinni garden for financal reasons. i spent every summer there. never before have i hated zuchinni's so much.....

My fam's fav way to eat eggplant.

peel then cut eggplant into cubes. Fry the eggplant in a lightly coated pan (i use coconut oil) till soft. cover with room temp mixture of three tablespoons soy sauce, one tablespoon rice wine vinegar, one teaspoon sesame oil and two tablespoons of freshly grated ginger.

serve with rice.

goes great with grilled fish dishes.
