Every year my family plants about a dozen tomato plants even though I am the only one who ever eats them. Since we live in California, the weather is perfect for them and we get about a thousand per year (they are usually cherry tomatoes). They are good, but I always eat too many and get really bad stomach aches...but why am I complaining about free, organic food lol.

Zucchini bread! But I guess that could be considered the same as zucchini muffins Well there is one other way I make zucchini.

What you will need:

Ground Beef or sausage
Zucchini (Duh!)
Corn or other veggies (optional)
Velveeta cheese

First, I brown ground beef or sausage in a pan. Next, I cut up the zucchini and add into the pan. I usually add in corn as well, but you're welcome to add other veggies. Cover the pan and let the ingredients steam for awhile. Once the food is done steaming, turn off the heat and drain. Return the contents to the original pan. Finally, add the Velveeta cheese in and mix. That's it! It's a relatively simple dish to make. I know it may sound weird, but I enjoy it haha.

I know what you feel... I just have waaaay too much cucumbers at home and I'm sick of eating them x___x I made pickles with them but they keep coming and I don't have enough jars to contain them!

You could cook a zucchini soup. That's what I do when I have too much vegetables (doesn't work with cucumber though :P) http://allrecipes.com/recipe/zucchini-soup-i/ This recipe alone needs 8 zucchinis! (But it makes 8 servings, so you could reduce the quantities)
