I don't know why.. But I always loved the opening song from the show This Ugly Yet Beautiful World. I also loved the endings to Ghost Hunt (Ahh.. That ending song fits the show so perfect.. It really adds to the environment) and Trinity Blood. When I was younger and first getting into anime, I loved the opening song to the show Kaleido Star... I also loved pretty much all the openings and endings for Inuyasha.

For me it's Plingmin's "This World Is Yours", used as an ending theme for Gintama. I urge you guys to go find the band's video (hard to find as Sony Entertainment closes pirated copies down almost as soon as they appear on YouTube), 'cause it's really sweet.

I love "Mister Raindrop" from Amplified, also used as an ending theme on Gintama. Amplified was a teenage band when they wrote this fun little song and the video is still readily available here and there on the internet. In this case, however, Gintama's take on it is wonderful-Elizabeth with umbrella dancing in the rain.

Log Horizon's intro theme is "Living in the Database" and it's just beautiful. Watch the first ep of Log Horizon to hear the song and I believe you'll love it, too (both the song and the anime).

RWBY's intro is definitely schue enough to keep it on your Droid. I always enjoy it when watching a new ep.

Finally, Deadman Wonderland's "I Will Be Your Deadman" is really fine and worth listening to.

I more have favorite bands that sing anime songs than specific favorite songs from anime, save a few. See-Saw was awesome back in their day, and my absolute favorite anime song is by them: Kimi ga Ita Monogatari, third opening song from the .hack//Liminality OVA series that came with the original .hack games. Love FictionJunction YUUKA, T.M. Revolution, SID, Kalafina and Emily Bindiger. Really into Heavenly Blue by Kalafina right now, and if you don't know who Emily Bindiger is and haven't heard her singing, look her up and check her out. You'd be surprised, because she's probably sung a song from an anime you know.

Oh and for anime composition music, Yuki Kajiura is a master and a Goddess all her own in that department.

It has to be Silver Sky by Nano from Arpeggio of Blue Steel. The song is absolutely perfect to me in every way and they picked the right scene to play it near the end of the series.

I loved S-Cry-Ed's Reckless Fire song, which sounds somewhat like a Ricky Martin tune and it's ending Drastic My Soul.
