Fate/Stay Night VS F/SN: Unlimited Blade Works HELP

Hello!
I just finished Fate/Zero the other night, and absolutely LOVED it! I understand it's a prequel to Fate/Stay Night, but have come into some confusion.

I understand that a new anime is being released; Fate/Stay Night: Unlimited Blade Works.
The question being, should I watch F/SN (2006), or should I watch F/SN: UBW?

I apologize for the n00b question, if this is. I'm simply at a complete loss at the shows and such. I've read they're all individual stories, that non are canon, etc.

I was also recently told I shouldn't have watched Fate/Zero first, due to spoilers or plot twists in F/SN..?

I greatly appreciate the help anyone has to offer! Arigato!
