I'll go with ones that don't have an anime right now...

So...

Monster Musume: Xebec, because they did TLR which Monster Musume gives the same vibes of.

Vinland Saga: Madhouse or maybe ufotable, not really sure though...

Yotsubato&!: Though the mangaka said he didn't want it to become an anime, I would choose J.C. Staff, probably because they did the mangaka's other work.

Honestly, I don't care what studio does it as long as they get a director who respects the original manga / LN it's based off of, and tries to be as faithful as possible, without thinking he's better than the original creator, or trying to mash / rush as much of the story as possible into it.

A-1 pictures is doing good with Your Lie In April and did good with Ao Haru Ride so I would say them
And the manga I would pick would be Hirunaka no Ryuusei

My favourite manga is Dorohedoro, though unfortunately I can't think of any studio that could keep the artstyle the same. But if I had to pick, I guess possibly Shaft or MAPPA. Or Ufotable.

Bonus:
If Toei, DEEN, Pierrot, or JC Staff ever tried to touch this series, I would fly to japan and burn down the studio.
