How Should I Approach SAO?

All of the SAO anime is canon. The only question is whether you like the direction the story takes. As you can see, some people do, some people don't, but none of it is filler. It doesn't need to be. The anime has not caught up to the LN. It's only covered about half of the volumes that are currently released.

Story is worse, pacing is worse. The first season could be said to move at a break neck speed, but rather than slow it down a bit, it is slowed to molasses. Maybe you should try watching it again and consider that binge watching lessens the strain of bad pacing. Direction is worse as well.

I gotta say though, I think Kirito is more successful as a Demon Lord. I think he should stop being a swordsman.

Every time he is a demon lord, he gets all the chicks, at the same time. As a swordsman, he gets one, and the others are left to fight for scraps.

(All these Kirito's have the same voice actor)

Actually the subtitle of campione is まつろわぬ神々と神殺しの魔王
Which roughly translates into The Pagan Gods and the God Slaying Demon Lord.
He is officially a God Slaying Demon Lord.

You might know this already, but it is canon, but they skip content in the first 25 episodes. SAO II is much better and follows the rest of the light novels better. Again, you might know, but SAO II covers Volumes 5, 6, 7, and a side story from Volume 8. It is a good adaptation so far. I am excited for Mother's Rosario!

They did add some filler into the GGO arc.
