I usually don't rewatch anime, or anything for that matter, unless I'm seeing it with another person. On my own, I've seen a couple of shows twice, but not many. The only shows I have seen in their entirety more than twice are three times for Shuffle!, because it was the first anime I watched that I both recognized as anime and went out of my way to watch (so my first anime, really), and Fate/Zero with four watches all the way through, and countless viewings of individual episodes. Everytime I watch Fate/Zero I get something new out of it and my appreciation for the show increases more than before. It is my favorite anime of all time, and I don't see that changing anytime soon.

Like some people have been saying, I'm in the same boat of not really re-watching things. The only things I've rewatched have been things I've shown to others, that said; I've shown Trigun to A LOT of people.

The Evangelion series and the movie End of Evangelion. There is almost always something new that I learn to appreciate and think over from the series every time I rewatch it.

After that is Ergo Proxy. It's a good show that turns out to not be as deep as I initially thought. It seems they wavered a bit towards the end, but it still makes you think a lot.

Then after that, Ghost in the Shell: SAC and Cowboy Bebop. These are classics and almost always enjoyable.

Another honorable mention is Gundam Wing. I can't remember how much I have rewatched this show. But it is great. Last spring I just finished reading a ton about states and aristocracies in history. So I gave this show a new go around and it really felt like a new experience.

Due to time constraints, I generally don't watch a show more than twice. That said, Ranma 1/2 would be the show I have watched the most, though it's only for selected episodes as I only have watched it through the first four seasons. It was the show that I grew up watching at a time when anime shows in America were few and far between. So with the lack of other anime to watch, I ended up watching certain episodes of Ranma so many times.

The Melancholy of Haruhi Suzumiya (tho to be honest, I do skip the Endless Eight).

Love, Chunibyo & Other Delusions (and Hearthrob) because anyone who doesn't love Rika has no soul.

The one I have watched the most is Toradora. It is simply the most well crafted romance anime ever.

Claymore. It's one of the few (only?) all female action series where the women act like you'd expect action characters to behave. They aren't drawn ridiculously out of proportion. they don't run around mostly naked. It's just an all-around awesome anime and even better manga.

Gintama because Anpan Gorilla's and Penile Brakes with a story that has been there all along if you pay attention to detail.

To be precise i watch at least one episode everyday.

FLCL, Beck and Toradora are the three I've watched time and time again. Makes me want to watch beck yet another time thinking about it now.
