Although fantasy is fantasy to me, rather we are looking at a relationship between humans and vampires, humans and demons, same shit different label to me.

Hey, don't lump all vampires together. Throw out the vampires that are twilight-esque or just an excuse for ecchi and leave the ones that actually result in good drama, horror, or symbolism.

I agree. Can't think of an anime, but the Dresden Files have sex vampires that are important to the story. And they're actually interesting characters and well done. There is the whole 'vampire feeding ~ sex' symbolism. I just get annoyed by shows like Strike the Blood where they shoot the story in the foot because they're too busy having suggestive moments with the harem that don't go anywhere.

I'm not really an ecchi fan. I prefer if ecchi stuff has a purpose in the story and isn't just there to be there.

Well, part of it is probably that terms like "demon" or "devil" are vague enough to mean pretty much whatever the author wants them to mean. I mean, you've brought up a case in point: the in-universe meaning for the phrase "demon king" in Demon King Daimao is a title which neither entails that its bearer is themselves a demon nor that they command a legion of demons. It simply refers to someone with an immense amount of magical power who is apparently predestined to rebel against the prevailing system and its leadership.

Another thing to keep in mind is that even when a clearly defined sort of demon's name is dropped (Kurumu Kurono of Rosario Vampire, for example, is a succubus) the authors of manga and anime stories do not necessarily feel compelled to strictly follow the traditionally assigned characteristics and behaviors of these beings beyond what is necessary to allow the name to make any semblance of sense. Going back to Kurumu one will quickly notice that there is no indication that either she or her mother are fallen angels or in the service of the Christian devil, that Kurumu commits herself to a single romantic partner and never seriously pursues anyone else even for casual sex, and that she's portrayed as being rather shy even when propositioned to have sex with her chosen romantic partner. The only indications we actually have that Kurumu is a succubus are her good looks, her bat wings/tail, and her mind control powers. Beyond that we have to be explicitly told that she's a succubus in order to even arrive at that conclusion.

At the end of the day the reason there are so many "devils" and "demons" in ecchi anime is the same reason there are so many cross-shaped explosions in Neon Genesis Evangelion. It's the same reason the "Anime Catholicism" trope even exists: religious imagery/language/myths/organizations can provide a handy substrate on which to build an entirely new concept without having to start from total scratch (Demon King Daimao) or can add aesthetic appeal and (in the case of a demon girl being part of a harem) a sense of danger and excitement.
