Because the plot needed to get moving.

The fact that people could not log out, was, I believe, only part of it. In my opinion, the main reason people wanted out, was because if they killed someone in the game they would die in real life. But, at the same time, you couldn't not fight because others were trying to kill you to save themselves or just for the fun of killing people (Laughing Coffin, for example). The fact that people were unable to log out means that people felt forced to take the life of someone else and really felt the weight of a human life. This, compounded with the fact that people felt, that Kayaba forcing people to stay logged in, disrupted their daily lives and encroached upon family life were probably what rubbed people in an unpleasant way. In short the game stopped being a game.

Even though it would be a cool experience to be in SAO, Over time people would want to go back to their families, also, the constant threat of death probably motivated them to beat the game.

Well at the end, everyone was forcefully kicked/logged out of the game. So i'm sure there were people that didn't want to leave because of whatever reason.

The fact that they had a time limit in that world. Their real bodies decaying in hospital beds somewhere in their country.
Big ass hulking monsters against weak-minded hardcore gamers in person where dying meant gone for good.

I'd love to go to a world like that, where physical abilities determine everything. Even if it were the same situation with my real body in a hospital somewhere. xP

If you're looking for another anime in the same genre, i recommend 'No Game No Life'. Fortunately CR hosts this series. Its extremely good and similar to SAO, but with very different ideals behind it.

The fact that you couldn't log out plays a major role in why people didn't want to stay. And also I'm sure that most of them missed their families as well. Plus, SAO is a death game, so if they get killed in the game then they really do die, so I'm sure that most of them didn't want to stay with that constant fear in their mind.

But, I'm sure that some of them did want to stay, as you could tell that during the end most people just gave up on fighting on the front lines and just decided to enjoy their lives there.

Being stuck in an MMO environment is a very appealing fantasy. However, when you consider the fact that the longer you stay in the game the more your RL body and relationships deteriorate, you realize that you have got to get out of there as fast as possible.

Simply deciding to live in SAO is not a sustainable livelihood. You are more likely to die IRL or have someone figure out how to disable the system than be able to be stuck in there for the next 50 years. Which means the faster you get out, the better it is for you.

They missed their families, their real life bodies were dying, everything in the game wasn't actually "real", and they could die in the game and then they would die in real life.

If you died in the game, you die in real life. People die when they're killed after all.

I'd say because they missed their families, they were also being cared for in hospitals, if they got disconnected for any reason they'd die.
