They'll probably do it at some point. I know a lot of people hate the SAO anime (I don't like it either, although I've seen worse, way worse) but they all say that the novel is actually pretty good, it was all a case of a terrible adaptation (even though I can't see Kirito as a compelling character at all) and since Progressive is a re-imagining, they could make a good anime, if they change the director that has been handling everything related to SAO in animation and hire someone else.

If it'll make money, then, sure, why not?

If I had to guess, it'd be better off as an OVA series (or whatever the acronym is).

It'd be one long ass OVA then, if we're going by 1 OVA per volume.
