So from what I remember it was another one of those Transported into a game anime.

In one scene this guy was trapped by a large knight looking monster and the only thing he could do was shield himself with a spell so he stood there while it repeatedly attacked him against the wall. The a girl came and saved him and yelled at him for being useless.

The next scene I remember is the same boy waking up in a bed surrounded by white light and trees and a short talking cat in pants and a hat.

There were also scenes where it showed a plaza with a fountain and people walking around it tainted grey and I think a date.

And lastly the last thing I remember is a different group of people in a mansion opening a door and there were these weird giant lint ball looking things flying around and for some reason they were extremely dangerous and then to save someone the Cat wearing pants and a hat died.

I know it would be helpful if I had images or more information but this was from over 5 years ago. I think it was on Toonami or something similar to that.

I think he meant "the cat, who was wearing pants and a hat, died", and not "the cat, who was wearing pants, and a hat both died".

As for the initial question, the only anime I know of with a trapped-in-game motif and a cat-person is Log Horizon, and your description otherwise doesn't seem to fit it very well. Sorry.

It's .hack//Sign, aired in 2002. You can find it on Funimation, Hulu, Youtube.

To correct your understanding only the MC is transported into the world. Additionally I believe .Hack//Sign was one of the first series to produce that interesting setting of virtual trapping.

Brilliant series, plus it was the composition from Yuki Kajiura that got me into the whole Anime Music deal.

If you liked the anime and are into gaming and/or manga, .hack is very much a multi-media franchise with quite a few components.

There's also OVAs (I don't know how easy these are to find, the short four OVA series .hack//Liminailty was released as a DVD insert in the .hack// ps2 game series), movies and another series.
