I am absolutely in love with Non Non Biyori, and I would love to see a season 2! But we haven't gotten any news on it nor have we really heard anything about it for almost a year. So has it been cancelled, or is it just taking longer to make?

IIRC, the first season used up a lot of the manga, something like 37 of then ~50 chapters, so they needed to wait for more. Its a monthly manga so it takes time. The manga is now up to ~70 chapters, and they would need 22-24 at minimum for a season, so they are close.

Silver Link has also been busy with other shows like Yuri Kuma, Strike Witches OVAs, Prisma Illya, and others.
They already have 2 shows lined up for the summer so I would guess it would be in the fall.

Which is way too long for me

It's not necessarily (and most likely isn't) up to Silver Link to decide if they're going to animate an adaptation. The most they can do is put themselves out there, and try to be a more appealing option than any alternative solutions (but doing very well with the first season would help with that). However, the final decision would be up to the publishing company, and other members of the production committee may also have a say.

That's true, and studios have changed between seasons before.
But in this case, at no point was there ever a question of who was going to animate S2.
It was always going to be Silver Link.
