Umm....let me see. I guess the "exotic" meats I've eaten include deer, elk, alligator, rabbit, frog legs, and snake. All were fairly good.

It had the consistency of soft tofu

Oddly enough I think I have actually eaten more lamb brain in my life than tofu.

Buffalo isn't hard to find, squid is regularly consumed depending where you are, 0/10 try harder

Alligator, rattlesnake, lion, buffalo, bison.

Used to be a restaurant near Indianapolis that had a lot of exotic meat like those, plus giraffe, gazelle and more, but they've been closed for close to 20 years.

I guess bear, moose, elk, venison (if that counts), duck (would it count?) and snake. I've also had quail and pheasant that I shot myself but I'm pretty sure those don't count ........

I've tried some - but as others have mentioned, one man's exotic is another man's every day. Examples:
Alligator - Tried it in two different styles, fried in a po boy sandwich and ground in a sausage. The gator sausage was excellent. The gator po boy was decent, but the meat was a little tough.
Crawfish - Had their tails in gumbo and some fried crawfish. I like it. Similar (to me) to shrimp, but different enough to totally be worth trying!
Conch - Had fried conch while on our honeymoon in the Bahamas. It was great, albeit a little slimey. Still enjoyed it quite a bit.
Bison - Had some bison in a burger a few times. It's common enough in the US, but not everywhere.
Duck - Had it a few times, I don't like duck - although I don't know how "exotic" I'd call duck.
Frog legs - Tasted like chicken, honestly, but with significantly less meat. Wasn't worth it.

I'd pretty much try anything, though, as long as I knew the person or trusted the person preparing it.

Bison, deer, marlin, swordfish, shark, skate, quail, alligator, cuttlefish, octopus, turtle, boar, snail, giant clam, ostrich.

Don't know how exotic these are but I've tried all these in addition to the usual beef, chicken, turkey, pork and usual seafood.

since what is and isn't "exotic" varies by geography i'll just list them and let you judge:
Obviously pig, chicken, cow, turkey, various fish, shrimp, oysters, mussels and clams.
Ostrich (jerky), shark, deer, lamb, quail & quail eggs, goat, squid, rabbit, eel, duck & duck eggs, duck and chicken balut, crawfish, cow brains, cow tongue, cow cheek, cow head (cabeza), head cheese, Chicharrón & Chitterlings, cow liver, cow heart, giant water bug, and maybe blood sausage. AND frogs legs!
I'd want to try horse but you can't serve it here in cali

I'm an adventurous eater though
