kinda curious, I just finished fate zero and bleach. I've been wondering about one piece for some time but lol not gonna watch 500+ episodes so I'm wondering what happens, as for example in bleach before the timeskip
also any important back story arcs??

Don’t skip the Impel Down Arc! Also One Piece has the least amount of filters of the big 3. If you really want to cut down the time then read the manga.

If your going to skip half of a show, dont watch it at all.

Part of the reason for watching one piece is for the actual adventure aspect.

I get your point Azazel but one piece isn't close to being done(from what I've heard) so in this case and this case only I feel like skipping it won't diminish the quality of the show

I'll give you a summary of the first arc and a basic orientation to the characters, powers, locations, premises, and so on. Frankly there's so much to put into a summary that it would take several hours to type it up. I'll highlight important terms, names, and so on in blue, and I hasten to put emphasis on the fact that this will spoil pretty much the entire first arc. My description of Luffy's powers actually bleeds into later arcs (specifically the Sky Island and Water 7 arcs), but then what were you expecting in a thread literally dedicated to spoiling the first several hundred episodes?

I am not doing that for any more arcs. That took way too long. But there you go.

There may come a time when I will call upon you for a favour. It could be today, it could be tomorrow, it could never come. But when and if it does, you shall do whatever I ask of you without hesitation, question, or objection. If I demand your very soul you shall willingly give it to me.

I am, after all, an Oni.

Edit: Also, Nami's sub-arc episodes are very touching and have great action scenes. You should watch them.

Another thing you can do is watch the couple of recap episodes that come up during the Water 7 arc which show the quick back story version for the Strawhat crew, episodes 279-282. Though a bit is lost in the recaps feels wise if you haven't seen the whole of the arcs since its like a highlight reel, also if you haven't watched the water seven arcs start it does spoil a bit.

*shivers in disgust*

Nguuuuuhhhhh. 279-282. My frustration yet remains.

Yes, it will. There are future arcs that require you to have prior knowledge and understanding of certain character motives and events that happen very early on in the anime.

It doesn't matter how long the series is, whether it is 26 episodes or 2600 episodes. I'll reiterate what Azazel said.
If you're going to skip half of a show, you really shouldn't watch it.
One Piece, at this point, is a commitment.
If you're not willing to commit yourself, then it's not worth your time. Sorry to be so blunt.

Don't skip it.
One Piece is so worth it. Every episode counts.
You won't understand the bonds between the main characters if you skip it.
Oh my, so many adventures. It's like reading a diary.

Make sure to watch Thriller Bark, Impel Down and Marine Ford arcs. (The best ones and my favorites)

You can also save some time if you watch the compilation movies.
One Piece Episode of Nami and Episode of Chopper.
(I have heard that the Chopper one is a little different from TV series)
It's a last resource.

Well, good animation for starters...

One Piece was better pre-time skip than post.

Believe me, I used to suffer from the same I-won't-watch-500-episodes sickness.
Until a couple of months ago when I asked myself "how good are the old episodes really?" I started watching the whole thing from the very beginning and now I'm almost on the 600th episode without skipping ANYTHING (well, maybe some feudal specials) and, just like a late pirate would say, without any regrets.
