The original Fate/Stay Night anime by Studio DEEN covers mainly the first route, Fate, but it incorporates some aspects of the other routes in it.

Fate/Stay Night: Unlimited Blade Works tv show covers the 2nd route, Unlimited Blade Works. There's also a movie made by Studio DEEN that also covers this route.

There will be a movie (or movies? not sure at this point the exact plans) for the 3rd route, Heaven's Feel, by ufotable sometime in the future.

Quoted from my good friend farispie, this is everything you need to know:

Well, to be accurate, this is how it works :

See, the original visual novel that the anime(s) are based on had three "routes" or in other words storylines.

These storylines are : Fate, Unlimited Blade Works, and Heaven's Feels. Each storyline essentially has the same characters and premise, but the plots are different.

Now the 2006 anime adapts the "Fate" storyline. Now, most people who have read the visual novel dislike the 2006 anime quite a bit. So in otherwords, many believe the best way to experience that storyline is to read it in the visual novel. I personally agree with this sentiment, but if you don't plan to read the visual novel, then you ought to watch the 2006 anime. Just keep in mind many agree that the 2006 anime didn't do a sufficient job on portraying certain characters as much as they should have.

Now the current anime (2014), adapts the Unlimited Blade works storyline.

Finally, Ufotable plans to release a bunch of movies that will be adapting the Heaven's Feel storyline.

Also, there is Fate/Zero, a series released after fate stay night that is set 10 years before f/sn. I highly recommend you do no watch this one until you experience the Heaven's Feel storyline (whether be it through the visual novel or through the upcoming movies). Reason being a fair bit of stuff in fate/zero won't make as much sense without reading F/SN, and furthermore fate/zero spoils alot of the twists in f/sn. In other words, Fate/Zero assumes you've read F/SN .

Now for reasons, the original visual novel had you experience the storyline in the following order : Fate, UBW, and HF.

So really the easiest way to ensure that you've got the "complete" package so to speak, is :

A) Read the fate route of the visual novel, watch the 2014 anime, and then the Heaven's Feel movies when they come out. Watch Fate/Zero. However, I personally reccomend reading the entirety of the visual novel b/c it has a lot extra stuff the animes may not show, and plus it has alternate endings that are pretty cool.

If option A does not suit your fancy then :

B) Watch the 2006 anime, the current anime, the Heaven's Feel movies when they come out, then Fate/Zero.

Fate stay night is a Visual novel with 3 separate paths, the 2006 Studio Deen adaptation covers the "Fate" route (I can't recommend you watch this, it's bad) Ufotable is currently doing the "Unlimited Blade Works" route (as you know), and I've heard that the "Heaven's Feel" Route is getting a movie from ufotable (via MyAnimeList page for it) but no news on release date for it.

No problems. Honestly the easiest way in order to make sure you don't miss anything is just to read the visual novel. I tend to think of VNs has something like interactive manga/anime, just much more text heavy. Anyways, I find that this guide from the subreddit of FSN helps :

http://www.reddit.com/r/fatestaynight/comments/2vuci5/new_to_fate_v2_by_uadelkoenig/

"If you stay away from DEEN there is no bad way into Fate/, but because of the relationship between F/SN and F/Z, there is a best way. In order to get the story in the intended sequence, and to prevent spoilers, here are some suggestions:
Recommended
Entire F/SN visual novel -> Fate/Zero -> UBW anime -> HF movies."

Is usually the common sentiment amongst FSN fans. As you've already seen Fate/Zero, the experience isn't ruined for you, but you'll have a different experience than most (In particular with HF). So, basically for you :

Optimal choice : Read the FSN VN, then whatever animes you want
Less optimal choice : Go to the current (2014-2015) anime, and watch the HF movies when they come out.

FTFY, especially considering UBW anime gives nothing towards expanding Saber's story.

Welp, ah yes, I forgot to incorporate the fate route in the less optimal choice.

So personally there are three ways to go about it (from a perspective Aas someone who's personally experienced all fate adaptations and their original source materials)

Optimal:

Read the FSN VN, Then watch whatever anime you want.

Less optimal :

Read the fate route of the VN, 2014 UBW anime, HF movies when they come out,

Least optimal :

DEEN 2006, Then 2014 UBW anime, HF movies when they come out.
