Something like Cowboy Bebop, Trigun, Full Metal Alchemist or even Inuyasha makes you immediately think of their story line AND Music. But even something without an over-the-top classic story line like DRR! has a good intro that you can't help but watch. Other anime though I find myself skipping the exact one minute and thirty seconds because of the very reason of not wanting the music.
