I love anime with a slow, contemplative quality that focuses on environment and nuance of character relationships.

My favorite anime include:

Basically I'm looking for any recommendations along the lines of slice-of-life, shoujo, horror, or folklore.

I really do not prefer anything ecchi.

Its not on CR anymore, but one of my favorite character development anime is Ano Hana. You might have to search around to find it. Just be prepared for a tear jerker... its pretty harsh on the heart.

Here are a few that I'm rather fond of! Based on your list, you may like them too.

The Eccentric Family - Humans and Mythological beasts living side by side in Kyoto.
Tsuritama - Aliens, Social Anxiety, and Fishing... it's incredibly gorgeous.
Shin Sekai Yori - From the New World Apocolyptic Near Future following the lives of psychic children as they grow up.
Star Driver - Giant Robots, a look at the weird sexual tension that occurs as a teen, and a story from the creator of Revolutionary Girl Utena.
SHIROBAKO - Anime on the making of Anime.

Agree wholeheartedly with Zakuro, Spice and Wolf, and Aishiteruze Baby. Some others:

Nagi no Asukara has an interesting world, some solid characters, and a nice combination of romance, comedy, and drama, and it all builds to a head pretty slowly and methodically. (Not to mention some gorgeous artwork.)

Hanasaku Iroha is a good slice of life with a bit of romance about the running of an inn.

Usagi Drop is a classic slice of life about raising a little girl, and one of my favorite anime of any type.

One Week Friends is a nice little contemplative piece about a somewhat absurd situation.
