Kakashi vs Obito is a prime example. Samurai champloo was solid through and through. Fate / Zero was good but I want better than that. Any suggestions?

The Legend of Condor Hero(omg are the fights awesome in this series, you have no idea, It's crazy awesome, easily some of the best fights in anime history)

Kingdom(a lot of great 1 on 1 fights in this, including a amazing 2 on 1 fight)

The Legend of Qin(there's a bunch of really good fights in this anime, the animation follows game logic, since this anime was actually created by using a game engine, so the animation might not be exactly what you're looking for. However even so, atleast check it out, because the fight are still awesome, and clearly carefully choreographed)

Bleach. When the real fights happen, they're insane. Some last 5-10 episodes.

Basilisk and Claymore have some really enjoyable fight scenes. Both are swords style, so seem to fit your interest listed above.

Claymore was also very good! I was thinking about adding it to the ones I mentioned. I'll look into Basilisk. That one is a little older right?

Bleach was good all the way until it was supposed to end and didn't. People agreed with me apparently as the show was canceled. Some fights did last several episodes, but the super hyped up battle between Aizen and Ichigo only lasted long enough to slice a couple mountains in half. Was one of my biggest anime heartbreaks of all time. The only time I've ever been that let down in my life is when DBZ replayed every episode up to the end of the Frieza saga and then started it completely over again before moving onto the android saga.

I'm forsure going to check out The Legend of Condor Hero. Let it be known though, if you were found dishonest in this post I will HUNT YOU DOWN!!!! and tell you how sad I am.

Seriously, one of my favorites of all time. I watched it after watching rurouni kenshin also, which IMO is the best way to watch it. Together they hold legendary status in my life.
