A few that many on these forums haven't seen:

Serial Experiments Lain: A mind-blowing "wtf was that?" kind of show, but worth seeing.
Kimikiss Pure Rouge: A solid, relaxing romantic comedy.
Nogizaka Haruka no Himitsu: A very good ecchi rom-com
Aishiteruze Baby: Family-focused slice of life, with a bit of shoujo romance thrown in.
Valkyria Chronicles: A show about building friendships--and a little romance even--in the middle of an all-out war.

Thanks so much guys, these are some really good watches! There are a lot of titles here that I have seen already and a lot I haven't. (That's mostly my fault for not posting a list of past watches and preferences)

If you haven't seen any sports anime yet, I recommend Haikyu!! Click the spoiler for a magic trick!

Edit: I also recommend Natsume Yujin Cho. I really like it. Here's another magic trick.

I've seen the entirety of and thoroughly enjoyed Haikyu; however, I will definitely give Natsume Yujin Cho a watch because I haven't had the pleasure of seeing it yet, thank you VERY much for your recommendations.
