Coffee or lunch is definitely the easiest. For most people its enough that you just went up to even ask them at all, but if you very casually toss out the idea of a lunch date or a coffee break those are often the most comfortable situations to start with and at that point its just a matter of exchanging contacts with eachother and just finding some free time that you both have. Of course initial rejection might happen, but its honestly less likely if you approach it very comfortably, not like a date, just time to chat. Only after you get through with that first subsequent meeting will you be able to determine if it was a date or not (I.E. whether they say 'yes' or 'maybe' to a proposition for lunch again sometime or some other activity)

But really just play it cool, if its someone that you're gonna want to be spending more time with in the future they really won't be expecting too much from the get-go. Eventually, if the chemistry is there between the two of you then things will begin to fall into place; you'll start suggesting more extravagant/intimate dates and eventually you'll just feel comfortable enough around the person that you should just pop the 'lets make this thing official' type question.
