Can I have your pho recipe? :D
I live in Canada though, so I might have to make substitutions for any ingredients that aren't available.

My recipe isn't very traditional, so be warned. I use some Japanese and Taiwanese ingredients.

1. Oxtails - You can use all sorts of other bones, like neck bones, shank bones, and knuckle bones, or a combination. Just make sure you have enough. I crack them with a hammer before cooking but that's not really necessary. I used about 3 or 4 pounds.

I finally have a pork bone, but I doubt it's 3-4lb. Can I freeze it?

Pho broth is best with beef bone, but you could make your own broth with pork bone. Freezing should be okay, just be sure to clean off the bones with boiling water at least before you use them for the broth. It helps prevent the broth from being cloudy.

Okay, I'll do that. Unfortunately it's a little harder to get bones here (besides chicken bones), the only reason there was a bone in the pork was because we bought it from the Asian foodmart. ^^()

Hope it turns out great!

Chicken bone is pretty versatile. You can make a giant pot of stock with it like me and use it for pretty much anything. Super easy, too. Just boil in water and that's it. If water is called for in another recipe, just use chicken stock. Even if it's not seasoned, it still adds some depth of flavor to your dishes. I've experimented with cooking rice in various soups and stocks, and even beer. Some have turned out to be good things. I then use the rice to make something else, like fried rice or onigiri.
