I love cheddar, personally I like it with near to anything, it can vary to a large degree, its usually not too salty, the soft/hardness is perfect in my eyes. It tastes good cooked, uncooked, grated, sliced, in chunks, crispy etc
Personally I like paradise islands cheese the most, they have standard good cheddar, they have multiple agings as well, and a bunch of fancy stuff I can't afford, but I still love cheese in general (if it is not way to salty, yes armstrong your cheese is way to salty).

I like eating Extra Sharp/Sharp Cheddar. I think my favorite is Ghost Pepper Cheese. Also, working at a cheese factory that shreds, and slices cheese. I can at least see some interesting cheese once in while. When I first started working there, there was some onion flavored cheese, which tasted pretty good. There was another one, that had some cranberry inside of it, which also was really good.

You must not like tasting things lol. Best i can do is pepper jack. Im no stranger to really hot foods, da bomb sauce-shudder but ghost peppers are just beyond pointless imo,

You're a brave one, Da-bomb sauce was made with habanero extract before the whole ghost pepper became a craze, that alone was the worst mistake I ever made besides ordering the hottest hot Indian food...Never again.

As for cheese brands, Tillamook all the way, it's hands down the best company at least in the U.S mo. If they would only make a gouda my life would be complete.

Red leaf cheddar, smoked gouda, and pepperjack are nice. I like habanero jack as well.
