One thing I noticed over the years is that all the good anime have a proper ending. Just think about your favorite anime, doesn't it end with a conclusion? FMA: B, Deathnote, Cowboy Beebop, Evangelion, etc. (generally considered "good" anime).

What happens often, is a show gets popular so they keep churning out chapters/episodes until people stop caring and it stops making money and then they finally end it quickly, but by now no one cares because they've killed their own story (rip Attack on Titan).

It just seems like anime creators would realize by now that planning the entire plot out before going into production has huge advantages that outweigh the possibility of it flopping. (Good example would be parasite.

It's really sad to see creators butcher their own anime/manga.

The world runs on money.
Writers keep writing until people lose interest because money.
It's better for the anime to have open endings so the staff can freely decide whether to make a second season or not.
Flopping in the anime industry is quite severe, so they'd rather not. People lost jobs over Nichijou.

On another topic, I don't feel that writers are writing their stories past their expiration date. There are plenty of stories out there have have definitive endings.
Look at Shigatsu wa Kimi no Uso and Shinsekai Yori. Both have very clear endings and require no sequels whatsoever to complete the story.
