If I remember correctly as to when they were released, the two the stick out in my mind from watching on the Anime Unleashed segments of TechTV (remember that?) were Banner of the Stars and Crest of the Stars. I really wish I could rewatch them in order here on Crunchy...

I watched most of the Toonami stuff during the early part of those years. But those were generally series from the 90's.

Aside from that I didn't watch much anime at all. Especially not anything that was new. Only series that really comes to mind is Death Note.

The older Adult Swim lineup circa 2003/2004 was good, even though most of those shows had come and gone in Japan years earlier. I think what made it sweeter was the fact that I had to sneak downstairs to watch it after my parents went to bed.

Mobile Suit Gundam
Yu Yu Hakusho
Trigun

All of those had a profound impact on how I looked at anime as an art form. I started watching Eva and Fullmetal a year or so later, then moved onto other things.
