Wow, someone pulled this thread from last year out of the freezer to serve up today

I tend to spend Thanksgiving alone the last few years, and often don't cook at all, but today I did cook a little bit and ate a mini-feast.

Cooked by me today, and eaten:
-Mashed potatoes
-wilted greens salad with pomegranate seeds and sesame seed oil
-stuffing (from a prepared mix box)
-gravy (from a prepared mix envelope)

Cooked by me the other day; heated and eaten today:
squash

Purchased cooked; heated and eaten by me today:
roasted chicken

About to be made by me today (with appliance assistance):
bread

There's only 3 of us this year so we didn't need a whole turkey.

- 3 Cornish Hens stuffed with lime, rosemary, garlic and a reduction sauce.
- Stuffing
- Cheesy Scalloped Potatoes
- Mixed veggies w/ vinaigrette, bell peppers, tomatoes & cucumbers
- Mini apple pies

Then I had a beer and took a nice nap. Woke up and watched Home Alone. Good day.

Heading over with my mother to some friends this year.

We're bringing deviled eggs because some people like that sort of thing

A Singaporean soup dish consisting of cured ham and fresh pork belly.

Two broiled chickens since we don't like turkey.

And some vermicelli stir-fry.

Cooked up 4 turkey wings and 2 sweet potatoes. deboned the wings. whipped up the taters with a tablespoon of real butter, 2 spoon fulls of brown sugar, some cinnamon and a light sprinkle of ground ginger for a little bite. Put the tater mix in a bread pan with mini marshmallows on top. Put together the green beans and cream of mushroom soup with french fried onions in another baking dish. Made a turkey gravy from the wing drippings and poured that over the deboned wings THEN i made up some stuffing and added in a whole yellow onion and 3 sticks of celery that I sautéed til the onion caramelized. I put the stuffing mix on top of the turkey. All three dishes back into the oven for 30 minutes to heat everything through then served up. Just me and my elderly parents. We all missed the cranberry jello salad But might make that for christmas along with ham & stuff.
