It depends. Is it a random collection of gift cards in different denominations from a variety of stores (inlcuding stores I don't regularly shop at/don't want to shop at), or are the gift cards somewhat generic, or for places I regularly spend money?

Cash for sure, the things I would do with $10,000 are things that there aren't gift cards for.

Depends on the gift card, and many (if not most) have months (if not years) of wait time to be cashed in. Those Visa cards you might be able to buy on the rack at your grocer? No expiration date for the funds. You might (if you wait for way longer than anyone ought to, even slow cheapskates like me) have to renew them. But no expiration. That cash is yours, period. They bought it, it's yours.

The gift cards easily. There are only a few places I like to shop at, so those would go a long way. Plus I could do some Christmas shopping as well.
