Then again, BBQ in the states is different everywhere you go.


American barbecue is all about the smoking process, not what sauces you use. The sauce is secondary.


I worked with a guy from Chicago, he would have taken the guy out back at this point and shot him for this comment.


Some of the most renowned barbecue restaurants in America use non-traditional sauces


This would have earned him a second bullet.

And the complete lack of wonderbread served would have earned him a third.

The sauce is a big deal. A lot of my friends love to be able to taste the vinegar,
