So, if you want to try something completely different:

Monster: Psychological thriller. Very clever, lots of suspense, very intricate plot. No magic or fantasy--just a morally grey universe full of interesting people, one of whom happens to be a serial killer.

Ah My Goddess : The art is pretty old-school, at least the first few volumes (it ran for 20+ years!), but that gets better as it goes along. Sweet romance, with a good blend of comedy and drama, with some action, and even some racing mixed in.

A Silent Voice : Smart and important drama that will make you think, with a bit of romance thrown in just to spice things up.

Anything by the Death Note, Bakuman duo. I'd say Vinland Saga and Berserk if you wanted to get into mature storytelling.

Ubel Blatt. A good manga to read. It is different in what you already reading. This one is monthly so the wait is going to be longer. Also Blue Exorcist.

Read anything that's actually finished. Seriously. It's pure torture reading ongoing manga since the ones that don't end tend to not end for like... 20 years... if that.

I may take a lot of heat for saying Hunter X Hunter is worlds better than Fairy Tail but I have to say it. Skip Beat!! is also fantastic and I highly recommend both of those reads and especially recommend putting off Fairy Tail for Hunter X Hunter.

If I may go a little off-topic I just want to warn you that the author of Hunter X Hunter is supposedly very sickly and thus is on hiatus. Because of this the series is incomplete so if you read through it too quickly you may find you've run out of material sooner than you wanted. That said, there are rumors he actually went on hiatus to write without being pressured ( he apparently was getting immense pressure to put out poorly written material for the sake of profit and declined to do so ) so he could put out high-quality work. Delving further off-topic, the 2011 anime for the series is actually on this site and is almost caught up ( I've been told they ended it before the current manga arc given it is incomplete ) and accidentally/quickly turned into one of if not my favorite binges to date. Skip Beat!! also has an anime adaptation on here ( that I am currently re-watching ) but it is only a small portion of what has happened in the manga.

EDIT: I didn't mention it when I originally constructed the post but I just saw Magi while browsing and that series is one I'd like to read.

Out of curiosity do you happen to know if the manga for HxH is still being produced? I recently started getting into reading and collecting manga myself and I'd love have HxH. Though the comic book store I use to purchase my manga from in tiny denmark told me that they're unlikely to order it home as some of the volumes have gone out of production?

In any case do you know any good manga sites to order from online that might still have them in stock?

Thank you in advance.

since you are reading 'Fairy Tail' I would recommend 'Rave Master' which is made by the same author.
