Species tend to be differentiated by whether or not individuals can mate and create a offspring capable of having more offspring. The visible differences aren't so much what causes two individuals to be classified differently but instead just a visual cue to be able to differentiate them without having them get it on.

I guess it's to do with the taste. It must have a mild chicken like taste and they catch them in the mountains.

What about Rocky Mountain oysters?

Whosoever descovers them gets to name them, so if you want to blame something blame the influx of unintelligent people. Also some have deeper meaning like horse flies because there bigger than normal flies. But again if you don't like it just use the scientific names or better yet ask yourself if you will ever be in a situation where naming them will even remotely factor in.
