After thinking about all the things I enjoy about Anime, I wondered what aspects may be under-appreciated or overlooked - even though a lot of talent and energy may have gone into that element in creating the work.

definitely not voice talent. heck, it's one of the most appreciated points.
there's a fandom for the seiyuus for a reason.
i'd say writing / story is appreciated as well
"uniqueness of character". considering many characters follow established tropes....

maybe the background you see in the typical slice of life anime series. there's not much appreciation on the research done for the background, how the animation staff, in many cases, visited different areas of Japan (or possibly the world), took photos and used said locations to make the background for the anime series. just choosing the locations require quite some creative thought.

Probably voice talent.

I personally never paid attention to it, until recently, I realised how much a good voice actor can make the series much more delightful to watch. I suppose you can call it the icing on the cake.

Not sure how many people like Initial D's music, but I love it. It's funny how underrated sports anime like Captain Tsubasa can be when it has good music.

I really like everyone's input so far - it's given me a lot to think about - I usually assume music is among the most appreciated, but I will be paying closer attention to that for example.

I've definitely noticed background too - such as a moonlit ocean scene in a beach episode of Idolmaster or a particular hilly house location in Myriad Colors Phantom World - I've noticed these things as namealreadytaken points out - but perhaps didn't appreciate that the location may have actually been scouted, and the work that would go into that.

The visual details that go into the backgrounds and so forth often get overlooked

Seriously fail poll is fail poll for not having the option of the hard work that goes into even mediocre anime let alone the high quality stuff. Everything else is a product of that dedication to the craft.

Ranwolf points out that I did not list the 'hard work' and "dedication to the craft' in the poll as possible areas of under-appreciation. I did however, acknowledge this fairly directly in my Poll announcement in saying 'what aspects may be under-appreciated or overlooked - even though a lot of talent and energy may have gone into that element in creating the work."

another area I thought of is Special effects or Sound Editing - as I am starting to notice that in much that I watch

This is more of a special case, but I think scripts/screenplays for animes not based off a preexisting manga deserves more credit some times. Of course the voice actors should be celebrated for their delivery but I think the action of writing that dialogue sometimes goes overlooked.

While this answer arguably could have been in the writing/story category, I went with the other option because creating the dialogue is what I see as the bridge between the story and the characters.
