The amount of dedication animators put in, even if it's something highlighted a lot. There are few harder workers for the amount they get paid.

true. they dedicate a lot of work in exchange for pennies. they are paid only based on the number of frames completed, even if each frame could take a long while to complete. last i read, the animation earns below minimum wage. even working part time in a fast food chain would earn them more money. this is (or should be seen as) a violation of wage law (and i think Japan have such law)

Writing/Story and the morals taught, thus the reason why 95% of every season is slice of life/romcom anime, and the reason the most meaningful and motivational anime (e.g Naruto) are trashed upon by a good amount of the anime fanbase.

I love the use of metaphor and juxtaposition that crop up quite regularly in anime (even in anime that aren't known for being particularly deep).

Definitely the voice talent. i.e. Steven Blum killed it as Spike!

I think too often anime characters are discounted as "weird" and aren't really seen as interesting characters.
The art is also massively underappreciated as well.

I personally don't appreciate voice talent as much as I should. But there are some pretty standout VAs whose voices I'll recognize across different animes no matter how small of a role they have, bc they're talent and uniqueness kind of sticks with me.

I think in general people don't appreciate the soundtrack of an anime enough, aside from the OP and the ED, there aren't many who consider the soundtrack to be memorable.
