I'm looking for something in the vein of old-school RPGs where a group of chosen individual go on an epic quest as they grow stronger and make new friends along the way. Any setting or genre is good. Any suggestions?

"Kono Subarashii sekai ni shukufuku wo", springs to mind as a recent anime that fits your description. It's kind of a comedy thing though. Still decent.

The Tower of DRUAGA
Is It Wrong to Try to Pick Up Girls in a Dungeon?

Those two kinda fit the bill.

Maybe Grimgar of Fantasy and Ash: but I didn't fully watch that series to verity.

This is always the correct answer to this question, but good luck finding any of the DVDs nowadays.

And, if you do find the DVDs, make sure it's the OAV and not the TV series!

I can recommend Record of Lodoss War, it is the closest an anime has ever gotten do a D&D campaign. Slayers is another great option for a fantasy anime in an RPG world, it has a more lighthearted vibe than Lodoss War but it´s still very enjoyable.

You could also say Seven Deadly Sins. no growth in powers, they're all already badasses, you just don't realize how badass they are right away.

Also on a side note, if you can find them still (probably in TPB or Graphic novels) the WARLANDS series of comic books are pretty good. They were heavily inspired by and influenced by Lodoss War.

If JRPG, Magic Knight Rayearth.

If D&D tabletop, Record of Lodoss War.

If comedy, Slayers or Gokudou-kun Manyuuki both work. I actually preferred Gokudou.

If OVA, Ruin Explorers. Mix of comedy and plot.

If shounen, Orphen. I really liked the story in the first season.

Maze: The Mega-Burst Space was fine as well although it's understandably near-forgotten.

Highly recommend the first two mentioned in this post. Might also check Ragnarok, KONOSUBA - God's blessing on this wonderful world!, and Deltora Quest (Haven't watched Deltora but the description makes me think of Druaga).
