So I love the Gundam series. I watched Mobile Suit Gundam ages ago, Gundam Wing and Endless Waltz ages ago, one of the Gundam 00 series, and of course Iron Blooded Orphans recently. The older Gundam series that I watched, I sadly do not remember every single detail. I was wondering if I needed to go back and rewatch these series before watching Unicorn, or can I just jump right in?

Considering Unicorn is set in Universal Century Year 0096, your best bet to catch up is Char's Counterattack, since all of that happened in 0093.
Seeing the rest of the other main U.C. shows is a bonus, but not necessary. I got lucky seeing Zeta and ZZ before Google unleashed the copyright-bots on everything Youtube had worth watching, but both shows run a combined eighty-ninety episodes. little bit much for a weekend...

Char's Counterattack is just one movie, and it'll give you some idea of the framing for Unicorn. I haven't seen Unicorn myself yet, outside of Dynasty Warriors Gundam. Sharing the hype, trust me

edited for forgetting that Char's Counterattack actually was shown in theaters, and not an OVA. Derp...

Gundam Wing, Gundam 00 and IBO are all their own things and have nothing to do with the UC timeline.

Unicorn is the current "ending point" of the US timeline that started with the original Mobile Suit Gundam

This is my personal recommended watching order to get the bulk of the story in the least amount of time:

Start with the first 3 movies (they condense all of the original series into 3 movies). Then watch War in The Pocket, 08th MS Team, Stardust Memory, Zeta Gundam (or the Zeta Gundam movies, but I prefer the full run here), ZZ Gundam, Char’s Counterattack and then Unicorn.

Of course, this omits most of the OVAs and other movies, but you can sort of watch them as you see fit.

Wow, thanks for the input guys. Sounds like there is a lot of check out before this. I think I'll just start watching Unicorn, and get caught up on the other things during the week between new episodes of Unicorn being uploaded on CR. This was very helpful. Now I know exactly what to watch.

The main series from the Universal Century timeline that come before Unicorn are
Mobile Suit Gundam (the One Year War, UC 0079)
Mobile Suit Zeta Gundam (the Gryps Conflict, UC 0087)
Mobile Suit Gundam ZZ (the First Neo Zeon War, UC 0088)
Char's Counterattack (the Second Neo Zeon War, UC 0093)

The others listed in Yamstarch's post are basically side stories not directly dealing with the main UC storyline, and I don't think ZZ Gundam is licensed, so I'd say you can skip those or watch them later.

And really I think you could watch Unicorn without seeing the rest and enjoy it, it has its own storyline and characters, mostly. One major character from the previous series is Bright Noa. You could actually read his wikia page to catch up with the major events that come before Unicorn (UC 0096)-- and stop reading at the Third Neo Zeon War section, which discusses in detail events that occur in Unicorn.

You can also check out the wikia pages for Amuro Ray, Char Aznable, and Kamille Bidan for more detailed background on the Universal Century timeline and characters. But these pages contain massive spoilers, while Bright's page is more of an overview (except for the Gundam Unicorn section at the end).
