I like them with:

mascarpone
cream cheese
ricotta cheese
fruit preserves
jellies
sweet black/red kidney/adzuki bean paste
tahini
hummus
(toasted) sesame seeds
flax seed
wheat germ

Combinations vary.

I'm not especially picky about bagel types.

Bread is just dried up dough. Only the crust is actually cooked. We should start calling the crust bread and the inside of "bread" dough.

First had one as a kid in the 70's, when we were invited to a parent's coworker's son's bar mitzvah, and just loved them! Dad then went to a bagel bakery in Skokie, IL every week or so after that to bring home bagels-- I don't think they were common in regular groceries as they are now. They only came in plain, egg, onion, salted, or with poppy or sesame seeds. Cream cheese is always good, but smoked salmon would be my favorite.

So you don't like pizza? Pizza is flat bread with tomato sauce and cheese. It's great, can't be pizza without the bread

You should try it sometime.

A few tens of thousands of years of baking history and maybe even a few chemistry majors might like to have a word with you about that…

For one, if the chemical or fibrous structure of something is altered as a result of exposure to heat, that pretty much constitutes cooking. You cook meat all the way through to ensure the inside of the meat is safe to eat. Therefore, the inside has cooked. The inside of a loaf of bread gets hot and (depending on the type) forms a sponge-like structure as molecules bond together into semi-rigid form surrounding pockets of air and other gasses formed during cooking. Remove the crust and it retains its shape. Simply removing moisture from the dough would not yield the same results. Therefore, the dough inside has cooked and become bread.
